- You can use the sausage you enjoy, but it should be smoked, cooked and sliced.
Wash kale discarding all tough leaves and cut into shreds. Set aside.
Peel and chop potatoes. Place in a large stock pot with the vegetable oil and water. Cook for 20 to 30 minutes or until potatoes are fork tender. Remove potatoes and reserve liquid.
Mash potatoes through a sieve or with a potato masher and return to potato liquid. Add salt and pepper and simmer for 20 minutes.
Add the prepared kale to the potato mixture in the pot and cook for 25 minutes.
