County Oatcakes

Dissolve baking soda in 1/4 cup boiling water; set aside.

In a bowl; combine oatmeal, flour, brown sugar and salt.

Cut in the shortening and mix to a small crumble.

Add the previously prepared baking soda and water.

Continue mixing until all the ingredients are incorporated.

Shape with your hands into a long roll.

Slice into 1/2 inch pieces.

Bake in a preheated 400°F oven for 10 minutes.
