In a large bowl, sift together the flour, baking powder, and salt.
Cut lard into flour mixture with a pastry blender or two butter knives until the mixture has a fine, even crumb.
Cover and store in the refrigerator until ready to use. Properly stored, this mixture will keep for about a month. Be sure to label and date your container.
To Make the Biscuits:
Add 1/2 cup milk to 2 cups homemade Biscuit Mix and stir until combined. Turn out onto a lightly floured surface and knead gently for about 20 seconds.
Pat down or roll out to 1/2 inch thickness and cut with a 2 inch biscuit cutter. If you don't have a biscuit cutter, you can use the open end of a drinking glass.
Bake in a preheated 400°F oven for 12-15 minutes, until golden brown.
